LEADERS MEET Student Leadership Johns Creek (SLJC) kicked off their 2020-21 program in new fashion in August. Chef Michaelle Tell: For me, Autumn is the time of year full of color changes and I like those Autumnal colors to show through in my food. We will be putting out a delicious braised lamb shank entrée with roasted garlic mashed potatoes and a root vegetable medley all smothered in our house demi-glace. We will also be presenting our blackened salmon entrée with a pumpkin risotto and our roasted butternut squash hummus appetizer. For most of my dishes a lot of inspiration comes from my southern Georgia roots infused with a Middle Eastern flair. All concerts except for Music in Newtown Park will take place at the Johns Creek United Methodist Church, 11180 Medlock Bridge Road in Johns Creek. “The Johns Creek Symphony Orchestra is optimistic that the curve will flatten and that we will be able to share exquisite professional music with the community safely this season,” said Music Director J. GET YOUR KITCHEN CABINETS IN TIME FOR THE HOLIDAYS. WE ONLY NEED TWO WEEKS! THIS PAST SUMMER, OUR FAMILY RETREATED TO LAKE MICHIGAN FOR OUR ANNUAL HOLIDAY. We looked forward to seeing life-long friends, sailing on Little Traverse Bay, hiking down to watch the sunset at 9:30 p.m. and going to our favorite breakfast joint for pancakes. When we discovered Park Place had closed, we cried, collected ourselves then turned to the trusty New York Times cooking app (always dependable) for recipes. After trying a few, we landed on this one and added blueberries because in northern Michigan in August, you must. Make a few extra and take to a neighbor who lives alone!

INGREDIENTS + 2 cups all-purpose flour + 3 tablespoons sugar + 1 ½ teaspoons baking powder + 1 ½ teaspoons baking soda + 1 ¼ teaspoons kosher salt (important) + 2 ½ cups buttermilk + 2 large eggs + 3 tablespoons unsalted butter, melted + 1 cup fresh blueberries (frozen, in a pinch) + Vegetable, canola or coconut oil for the pan DIRECTIONS Heat the oven to 325 degrees Whisk flour, sugar, baking powder, baking soda and kosher salt together in a bowl. Using the whisk, make a well in the center. Pour the buttermilk into the well and crack eggs into buttermilk. Pour the melted butter into the mixture. Starting in the center, whisk everything together, moving towards the outside of the bowl, until all ingredients are incorporated. Do not overbeat (lumps are fine). The batter can be refrigerated for up to one hour. (Put a dinner plate on top of the bowl and avoid plastic!) Heat a large nonstick griddle or skillet, preferably cast-iron, over low heat for about 5 minutes. Add 1 tablespoon oil to the skillet. Turn heat up to medium–low. Use an ice cream scoop or 1/3 cup measuring cup and spoon batter into pan. Dot each pancake liberally with berries. Flip pancakes after bubbles rise to surface and bottoms brown, about 2 to 4 minutes. Cook until the other sides are lightly browned. Remove pancakes to a wire rack set inside an oven-proof pan, and keep in heated oven until all the batter is cooked and you are ready to serve. Warm syrup in a small saucepan. Serve with hot coffee and your favorite

ELAINE STERLING WASN’T SURE WHEN OR HOW HER SPA ESTHÉTIQUE (OPENED IN JANUARY OF 2019) WOULD SURVIVE WHEN THE COVID-19 PANDEMIC HIT. Like many other small businesses in Sandy Springs, she made the right decision for her staff and customers and closed the doors. Facing uncertain times, Elaine did her best for those working for her and helped them file for unemployment. She offered incentives to her clients that if they purchased gift cards during the shutdown, 100% of the proceeds would support her out-of-work estheticians. Through it all, Esthétique managed to come out on the other side when the restrictions were lifted in early May. Elaine knew that re-opening wouldn’t be easy, especially re-opening the safe way, but she also knew

that after months of being on lockdown, people were ready to come back. And she was right! Following the strictest of guidelines set down by the CDC and the Georgia State Board of Cosmetology, Elaine invested in PPE, worked out new protocols that put staff and client safety first including rigorous sanitation and cleaning between appointments. Her team did a thorough redesign of the entire Spa and storefront to ensure social distancing guidelines could be followed. When the email went out about the books opening up again, the clients responded. Even though business wasn’t where it was preCOVID, people had a clear need for their skin treatments and wanted to come back to a place that continually receives 5-star ratings on both Google and Yelp. For the last few months, Elaine has encourage business by offering hefty discounts on services (they are doing 40% off all services until December 31, 2020) and other specials like adding new services such as waxing for both men and women, even hiring two new Estheticians directly from the school she founded, the Elaine Sterling Insitute. INGREDIENTS: + 1.5 lbs. skinless chicken breast + 1/4 cup light brown sugar + ¼ cup honey + ½ cup light soy + 1 medium garlic clove finely diced + 1 tsp grated fresh ginger DIRECTIONS Cut chicken into thin strips, set aside. Combine all the rest of the ingredients. Add a little vegetable oil to a skillet and when hot sauté the chicken for 2 minutes. Add the remaining mixed ingredients and cook for 2 minutes. Serve the chicken over cauliflower rice. Cauliflower rice + 1 medium cauliflower + 3 tbsp olive oil + 1 medium finely diced red onion + 3 tbsp chopped parsley + Juice from 1 small lemon + Pinch of salt DIRECTIONS Cut cauliflower into smaller pieces and coarsely chop in food processor. In a hot skillet sauté onions and cauliflower for approximately 5 minutes. Add parsley, salt and lemon juice. CONTINUED >

INGREDIENTS: + 10 oz. precooked chicken sausage + 12 eggs + ½ tsp salt + 1 cup half and half + 2 tbsp butter + ½ medium diced red onion + 2 small garlic cloves - finely diced + 4 oz shredded cheddar cheese + chopped fresh oregano + Finely diced fresh chives + 1 sliced avocado DIRECTIONS Dice the sausage and sauté off in a skillet together with the diced red onions.
